Amaretto White Cookies

1: Preheat your oven at 350 degrees or use the cookie setting if available.

2: Using a mixer with the whisk attachment, beat the egg whites until they are white and foamy for about 1-2 minutes.

3: While beating, add the sugar and then the almond extract.

4: Switch to the paddle attachment and on low setting, add the almond flour and gluten-free flour.

5: If necessary, switch to using your hands to mix.

6: Roll each cookie into balls.

7: Dip each cookie ball into powdered sugar and place them on a baking sheet lined with parchment paper.

8: Flatten each cookie gently with your fingers or the back of a spoon and place a nut in the center.

9: Bake until light golden brown, about 15-20 minutes.
