A delicious cheddar dip made with sharp cheddar cheese, cream cheese, sour cream, and sautéed onions, served with warm and crispy crostini. Perfect for celebrating National Cheddar Day!
Heat oven to 375 degrees. Line baking sheet with baguette slices. Drizzle with olive oil. Set aside until dip is ready to go in the oven.
Over medium heat, warm butter in cast iron skillet. Add onion. Sauté for 4-5 minutes, stirring 2-3 times to prevent burning. Remove onion from pan and set aside in small bowl to cool when golden brown.
In a food processor, pulse cream cheese and sour cream until smooth.
In medium sized bowl, add cheese, cornstarch, salt and pepper. Toss to coat.
Add cream mixture and onions. Stir altogether to incorporate.
Add to medium sized oven proof pan (about 6-8” in width). Sprinkle with a layer of cheese. Bake for 20-25 minutes or until dip is light golden. At the same time, place prepared baguette slices in oven.
Remove baguette slices when golden brown and toasted, about 8-12 minutes.
Increase oven temperature to broil and finish dip to gain a crispy top, for 1-2 minutes longer.
Remove from oven and garnish with fresh cilantro, sour cream, green onions, and lime. Drizzle with oil. Serve with crostini and enjoy!
