This creamy cheese fondue is a simple yet impressive dish, perfect for a weekend brunch or gathering. Made with a blend of cheddar and Swiss cheese, it's delicious when served with colorful apple slices or toasted baguette slices.
In a large bowl, toss together both cheeses and the cornstarch.
In a medium saucepan over medium heat, bring the wine to a simmer. Reduce the heat to medium low.
Add a handful of the cheese mixture to the simmering wine. Stir until the cheese is melted, then add the remaining cheese 1 handful at a time, stirring until melted between additions.
Increase the heat to medium and cook until the fondue begins to bubble, stirring constantly.
Remove from heat. Add salt to taste.
Transfer fondue to a fondue pot. Set fondue pot on the stand and light a candle or canned burner under it.
Serve with apple slices and/or baguette toasts.
