GF Christmas Cutout Cookies

1: In a large mixing bowl, cream together butter and sugar.

2: Beat in eggs, one at a time.

3: In a separate bowl, combine the flours, salt, cardamom, and zest.

4: Whisk to incorporate and add to the wet ingredients while mixer is on low, about 1/3 cup at a time.

5: Scrape sides and beat again to ensure it's well mixed, but be careful not to over mix.

6: Cover dough and chill for 1 hour.

7: Preheat the oven to 325 degrees F.

8: Roll out dough on a floured surface, 1/2 inch thick.

9: Cut into shapes with any cookie cutter.

10: Place cookies 1 inch apart on cookie sheets lined with parchment paper.

11: Bake for 6 to 8 minutes in the preheated oven and remove just before the edges start to brown.
