These Salmon Poke Summer Rolls combine a variety of flavors and textures, providing a healthy and light meal perfect for summer. The dish includes a flavorful poke dressing and a chili-lime sauce that complements the richness of the salmon. The rolls are filled with fresh ingredients like salmon, avocado, and vegetables, making them a vibrant and delicious option to enjoy.
In a small mixing bowl, combine tamari, lime juice, honey, fish sauce, garlic, ginger, & chili flakes. Whisk well until sugar dissolves. Toss salmon in poke dressing & keep refrigerated.
In a small bowl, toss cucumbers with sriracha.
To make dipping sauce, whisk together lime juice, coconut sugar, fish sauce, rice wine vinegar, garlic, red chili flakes, & chilis.
Prepare summer rolls: quickly submerge 1 rice paper wrapper in the very warm water until soft but still workable (about 15 seconds). Lay rice paper out on a slightly damp cutting board and fill with small amounts of the salmon, ginger, avocado, scallion, carrot, cabbage, cucumbers, and seaweed. Carefully wrap the spring roll up as tight as you can without tearing the wrap. Repeat until no ingredients remain and keep finished rolls covered with a wet paper towel.
Place the summer rolls on a serving dish with a side of the chili-lime dipping sauce & enjoy.
